225 Club YEAR 6 Release No.4: BIB rum finished straight whiskey

225 CLUB YEAR 6 Release No. 4 is a wild one!

To start it off we created a single malt whiskey meaning the entire grain bill is malted barley which gives the whiskey a soft and subtly sweet flavor. To make sure that we do not overwhelm the light notes of the spirit we aged it in a toasted cask instead of the traditional charred barrel. The toast treatment results in less barrel influence to the whiskey so that the base grains still come through.

After the barrel had aged for 4 years we transferred the whiskey into an agricole rhum cask. Most rum in the market is made from molasses which is a thick, rich byproduct of sugar production. Agricole rhum uses the fresh sugar cane juice which results in a lighter and funkier spirit. After spending 6 months in the rhum barrel the whiskey had picked up just enough of that residual quirkiness.

The result is a whiskey unlike anything we have created thus far. It drinks much more like a Scotch having lighter body and nuance. Bourbon and many other American made whiskey have a much heavier and sweeter body due to the grains used and the charred barrels. This release is a wonderful example of why we love the 225 club and the experimentation, techniques, and flavors it allows us to try.
