Recipes with Spirits: Coffee & Sweet Cherry Pie
Our beloved bartender Liz is back at it again with a new treat for our Recipes with Spirits series. She’s getting heavy-handed with our Novo Coffee Liqueur, can you blame her? This time, she’s sneaking this delicious elixir into her award-winning Sweet Cherry-picking & Coffee Pie. She took second place at the Wheat Ridge Carnation Festival, so it’s legit!
Using frozen fruit, this pie can be made all-year-round and the cherries can easily be swapped out for blueberries, blackberries, or strawberries. Enjoy this pie with Liz’s Novo Coffee Liqueur Whipped Cream or your favorite vanilla ice cream.
COFFEE & SWEET CHERRY PIE
Ingredients:
6 tablespoons The Block’s Novo Coffee Liqueur
2 10-oz bags frozen dark sweet cherries
1 tablespoon lemon juice
2 tablespoons corn starch
1/2 teaspoon pure vanilla extract
2 tablespoons light brown sugar
1 egg
Prepared pie dough, enough for two 10-inch rounds
Novo Coffee Liqueur Whipped Cream (optional)
Cinnamon-Sugar (optional)
Preheat oven to 400 degrees F. Combine lemon juice and cornstarch with 1/4 to 1/2 teaspoon of water in a small bowl. Set aside. Remove prepared pie dough from the fridge.
In a medium saucepan, on medium heat add the frozen cherries. Let heat until cherries are thawed and begin extracting juice. Add brown sugar and Coffee Liqueur, stir to incorporate, then add vanilla. Let simmer until sugar dissolve. Slowly add cornstarch-lemon mixture to the pan and stir until thickened, 5-7 minutes. Remove from heat and transfer to a heat-safe bowl.
While the cherry mixture cools, whisk the egg in a small bowl and set aside. Roll out pie dough. Add one 10-inch round for the bottom round. Add to 9.5-inch pie pan. Add your cooled pie filling. Roll out the remaining dough to cover the filling. Decorate with additional dough scraps to form a pattern. Brush with egg wash and dust with cinnamon-sugar.
Bake for 10 minutes at 400 degrees F. Then, lower temperature to 350 degrees to 20-25 minutes, until golden brown and bubbly. Serve immediate and top with a generous dollop of Novo Coffee Liqueur Whipped Cream or a scoop of ice cream.
