225 CLUB YEAR 6 Release No. 3 is something we are calling “Vermouth’ish”
Vermouth is an aromatized fortified wine, flavored with various botanicals such as roots, barks, flowers, seeds, herbs, and spices. While vermouth was traditionally used for medicinal purposes, it was later served as an apéritif, and then became popular with bartenders as a key ingredient for cocktails, like the Manhattan and the Negroni.
Traditionally Vermouth is made from grape must with added alcohol and some proprietary blend of botanicals, and comes in it’s most original varieties as sweet or dry, however various expressions of Vermouth that vary in sweetness and color exist in due to market demand and modern practices.
As most of you know, our Tasting Room houses a cocktail bar with a well-rounded menu. One of our biggest challenges with this has been that legally we are not able to serve or sell any spirits we do not make-and Vermouth falls in to a category of spirit we are legally not allowed to produce-thus, Vermouth’ish is born
We used a red and white grape concentrate rather than must, our three grain vodka, and what we think is a botanical blend that gets us pretty damn close to the profiles we experience in a few of our favorites. The addition of Vermouth’ish to our back bar opens up a world of classics we have yet to explore, but with a TBDC twist. We hope you’re just as excited about it as we are.
