The final release for Year 3 of 225 CLUB is Peach Brandy Barrel-Finished Winter Gin. When The Block was still just a work in progress we developed the idea of having a family of gins. There are so many herbs, citrus, florals, roots, etc. to play with. How in the world would we pick just a single recipe. The best way to link those gins together was to make them seasonal in expression.

Winter Gin is a baffling one. At first glance it is shocking just in its amber hue. That color comes from the barrel it has rested in for six months. Upon first sip, the next pleasant surprise is the flavors. Built on our Autumn Gin recipe, the pop of complexity and spice from the clove, peppercorn, cardamom, and nutmeg tease your palate. Then comes the finish of brown sugar and vanilla from the American white oak.

For this one, we took it one step further. We put the aged gin into our used Peach Brandy cask to let it mingle in all those dark stone fruit sweet notes. It tastes like a gin/whiskey hybrid of peach cobbler.
